When you roll out of bed at it’s 10 o’clock in the morning, craving fruit rather than veggies, brunch becomes the menu.
Today’s masterpiece is a shout out to the sweeter side of healthy: ancient grains waffles topped with vanilla bean yogurt, strawberries, blueberries, and a dusting of cinnamon.
This was the closest version to the Spelt Belgian Waffles I ate months ago, the taste just won’t stay dormant in my memory, so, when I’m craving something similar, I make this dish.
I would have never thought about putting yogurt on the waffles before my spelt experience, though have found it makes for a great alternate to something sweet. Now, I can’t imagine eating them any other way.
